Not happy on using chemicals to do cycling, but is this the preferred method now?

Fishless cycling with ammonia is the preferred method. My own experience was that it was slow as death (non existent, despite adding all sorts of "miracle" bacterial starters) until I ended up adding a mature sponge from the guy I bought my discus from. Cycling, in terms of ammonia and nitrite degradation, was pretty much instant thereafter. Whether the tank is properly matured is another matter. I suspect that only comes from having fish in the tank excreting all sorts of stuff and introducing the right bacteria, whatever they are.

Well 1 week into fishless cycle and ammonia has gone from 3ppm to 1.5ppm so going in right direction, but is this on course?

Well cycling finished just over a week ago, and have just bought my first Malaysian discus!!

Bought from Discus for the Discerning, 3 Mosiac Leopards, 3 Penang Eruptions and 3 GLSS. Also whilst we were there the wife has picked the next 9 once all is settled. Going for Frama Rosa, White Butterfly and Golden San Merah.

Fingers crossed that all goes well. The only downside is that my bloody bogwood is still floating !!! Even with 2 heavy bags of sand holding it down.
